Love pizza as it’s something you can really let your imagination run wild in terms of toppings and flavours. In this recipe I’ve made a seafood pizza and used some frozen dough and sauce from Costco.
Value wise – the dough’s pretty expensive for what it is, but it does much better than those frozen pizza bases. You let it sit out side for 4 hours (we took it out before leaving for work) and it rises to a really fluffy dough full of air. Stretch it out on a bench with some flour and you’re good to go.
Only tip is to place the dough in the oven for a few minutes for harden it up a bit and prevent the juices from seeping through.
What you’ll need:
Pizza dough – we bought frozen but you can make your own.
Garlic prawns – we purchased the pre-marinated ones from Woolworths
Mushrooms, onions, capsicum
Chilli flakes and oregano
Pizza’s simple, lay on the sauce onto the pizza base, spread out your toppings, add the cheese and into the oven. Don’t be shy and let the toppings and cheese go all the way to the edge.
We’ve got a pizza stone, so make sure you let that heat up before putting the pizza on. I maxed out my oven at 260 degrees and baked the pizza for about 15 minutes. The end result:
Cooked my own dinner tonight and decided it’d be some grilled fish and chips (and a salad as well to be healthy). I kinda bastardised my own recipe from a few on the net and I think it turned out pretty well. Aside from slightly overcooking the salmon, it was rather delicious. Photo below:
Sea salt and black pepper (freshly ground)
Little bit of English mustard
How you do it:
Take salmon out of the fridge and let it sit for 15-20 minutes
Mix all the ingredients
Place the salmon in your marinade and make sure it’s fully coated, let it sit for 5 minutes, flipping each side in between.
Chuck the salmon inside your grill until it’s cooked (will vary depending on the size of your cut).
I used my convection oven instead of grill (it’s quicker and I was hungry) but a grill would definitely be better, you can also optionally add a little honey to the marinade.
I actually made this a while ago but haven’t gotten round to putting up a post about it. Coming back from Encasa and having this dish, I simply had to have more, but I wasn’t going to the city just to get some. Instead, I decided I’d make my own, I mean how hard could it be? After all it’s just potato cubes with a garlic mayonnaise with a spicy tomato salsa.
When I had it though, I felt it was missing something, sauteed diced onions!
Being the lazy guy I am, I made the recipe as follows:
Roasted garlic sauce (concentrated)
Whole egg mayonnaise
Hot chilli sauce (not the Asian variety)
Dice up the potatoes into cubes
Heat up some oil in a saucepan (to deep fry)
Place the potatoes into the saucepan and cook until golden*, meanwhile, cook the diced onions on a low-medium heat until brown and soft
Remove and strain
Mix the roasted garlic sauce with the mayonnaise to taste
Mix the hot chilli sauce and ketchup to taste
Place onions on the potatoes and cover with sauce. Enjoy
I seemed to have some trouble getting the potato cubes to be crunchy, so I’m thinking next time I’ll place them in an oven first to get them to cook inside and then deep fry them quickly to get a nice crunch. Will definitely try this one again as it’s delicious.
